Cold Soup?
Great soup for a hot summer day! The recipe originally called for watercress, but since I can never find watercress, I substitued arugula. I didn’t hear any complaints! And Jason actually really liked this one, and he doesn’t even like soup!

I have to admit…I don’t think this one would have caught my eye if I was reading the magazine. Even with the recommendation…I don’t know…it looks interesting. And egg?? Hmmmm.
It’s such a refreshing taste though, so clean and cold. Perfect for the summer.
For some reason I am drawn to cold soups, like gazpacho. . .
This was actually incredibly good. I was quite frightened at first, but once again Beth came through and made vegetables taste good!
