Again with the quick and easy pastas! Can you tell that I fall back on these types of recipes pretty frequently? The reason for this one is because I had all the ingredients on hand except arugula and pancetta (that makes it a cheap meal). It came together very quickly and warmed up great the next day as leftovers. The Arugula has a nice spicy taste but if it’s not your thing, you could sub spinach for it. There is some cream in there but 2/3 c spread over 1 pound of pasta doesn’t seem too bad to me! I bet you could use whole milk if you were really concerned with fat content. So overall a very good, quick and easy pasta dish, perfect for busy weekday nights!

    Looks good! I thought about making this recipe…but didn’t have a lot of the ingredients on hand and am not a huge fan of sun dried tomatoes – don’t know why. Glad you tried it!
