Again on the search for quick and tasty meals, I found this recipe. I pretty much already had everything on hand (still have beef in the freezer, that’s for sure), except for the couscous, which a quick trip to the bulk aisle quickly rectified. If you haven’t tried couscous, it’s an ultra quick version of a grain – a good substitute for rice! You just heat up some liquid (a specified amount by the type of couscous), add it to the couscous, then cover and let sit for 5 minutes. Super easy side! I added golden raisins to the couscous and used chicken stock as the liquid. The beef came together quickly and I added feta cheese to the mixture just because I really like cheese. :) It was fragrant (from the cinnamon and other spices) and delicious! Definitely a good weeknight meal with a bit of a Mediterranean flare!
