I was incredibly impressed with the recipe. It was so flavorful and so hearty, a great vegetarian entree. It was also very inexpensive – especially because I used dried black beans. I soaked them overnight and then cooked them until they were tender and then used them in the recipe instead of using canned beans. I was a little worried about using the orange zest and the juice from both oranges but it turned out amazing. All of the orange flavor added a brightness to an otherwise heavier dish. The cumin added a nice smokey flavor. I added a little shredded cheddar to the suggested sour cream and cilantro topping and it was delicious. Highly recommended – a great vegetarian meal that’s healthy and gentle to your wallet.

i have been following you for awhile and wanted to pass along an author you might to check out. my husband just finished reading the book ‘omivore’s delemma’ by michale pollan. and we both has read ‘food rules-an eater’s guide’ by him as well. great stuff. we are always trying to do our best with the things we are putting in our bodies…now we do cheat now and then and i have found i need that…otherwise i go off the deep end!! HA! anyway, after reading your blogs and mentioning about the efforts you are making to eat better i wanted to pass these book titles along to you for you to scope out!
