			<content:encoded><![CDATA[<p>I&#8217;ve been on a bit of a cookie kick lately. It started with the <a href="http://elizabethcarroll.wordpress.com/2009/07/17/world-peace-cookies/">World Peace cookies</a> and I haven&#8217;t been able to shake the urge to make cookies. Thankfully I have coworkers that I can bring my baking excess to. I&#8217;m thinking they&#8217;re going to extend my maternity leave a little longer if I keep bringing them these baked goodies. <img src='http://thinkliz.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>I decided I needed to venture away from chocolate based treats just to make sure that I wasn&#8217;t missing out on something delicious that wasn&#8217;t chocolate (blasphemy, right?). Well, I do have a soft spot for shortbread style cookies. Dipped in chocolate though. <img src='http://thinkliz.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  Enter, pecan sandies. . . essentially a <a href="http://elizabethcarroll.wordpress.com/2009/05/14/mexican-wedding-cookies/">mexican wedding cookie</a> without the powdered sugar on the outside. Sadly, I over-roasted the pecans and these cookies tasted vaguely of burnt popcorn. The texture was perfect and the taste would have been had I not been preoccupied with baby while the pecans were roasting. I love the size and the shape of these &#8211; perfect for grabbing a small handful of to munch on. Even though I messed up the pecans, I still feel that recipe is worth passing on:</p>

<p>After the pecan sandies, I thought it might be nice to gift some biscotti to a friend of mine, so I did a bit of research and came up with this recipe. <a href="http://elizabethcarroll.wordpress.com/2009/02/19/chocolate-hazelnut-biscotti/">Biscotti</a> seems so fancy, but it&#8217;s really so easy! I kept these guys a bit smaller than my last biscotti that I made and I thought they turned out great. Perfect for dunking in a cup of coffee or tea. Loved the almond flavoring.</p>

			<content:encoded><![CDATA[<p>I wanted to use up some hazelnuts that I had in the pantry before they went rancid. Those suckers are expensive! So, I saw this recipe from the <a href="http://www.amazon.com/Moosewood-Restaurant-Low-Fat-Favorites-Flavorful/dp/0517884941" target="_blank">Moosewood Resturant Low-Fat Favorites</a> cookbook that my coworker loaned me and realized I already had all of the ingredients on hand. Pretty convenient. So I whipped up a batch of my first ever biscotti. Super super easy to do &#8211; I had no idea! I also didn&#8217;t realize that they are baked twice, once in a log shape, and then once after being cut on a hard diagonal. That makes them super crunchy, capable of keeping for weeks in a sealed container and perfect for dipping in tea, coffee or milk. They are also healthier than I realized &#8211; there is no fat added to the recipe, no oils, no butters. The only thing that is &#8216;bad for you&#8217; is the sugar.</p>
<p>These would make great gifts if you prettied them up by dipping the ends in chocolate and rolling in chopped hazelnuts (I thought about doing this, but got lazy), add to a cute coffee mug with some fresh coffee beans, ta-da! Fancy, cheap gift!</p>
