			<content:encoded><![CDATA[<p>You may remember a certain <a href="http://urbanlegends.about.com/od/fooddrink/a/cookie_recipe.htm" target="blank">fictitious e-mail</a> regarding Neiman Marcus cookies circulating through e-mail back in the mid 90s. Years ago, I made these cookies and they are delicious, I would like to make them again. But that&#8217;s not the point of this post. The point is that Neiman Marcus has a different cookie recipe on their website that is their signature chocolate chip cookie. That was enough to entice me to try it.</p>

<p>We had the ingredients on hand to whip a batch of these up (sadly, only 24 cookies and they went FAST) and we baked them off. The addition of the instant espresso powder is perfect. It is barely detectable when the cookies are warm but develops into a bit of &#8216;je ne sais quoi&#8217; when they cool.</p>

<p>I think Jason was especially appreciative of these cookies as they were simple chocolate chip cookies. No nuts, nothing else, except for that tiny hint of coffee flavor that just amplifies the chocolatey goodness. I can certainly see why these cookies are the staple chocolate chip cookie for Neiman Marcus&#8217; cafe.<strong></strong></p>

			<content:encoded><![CDATA[<p>I have a soft spot in my heart for the oatmeal chocolate chip cookie. It&#8217;s like a cookie that is trying to be healthy, but just can&#8217;t quite make it. Story of my life! In reality, I really enjoy the texture that the oats give to the cookie. I&#8217;ve tried a couple different recipes, trying to get a good cookie but they always turn out kinda funky. A little too thin, too greasy . . . etc.</p>
<p>Well, of course I turn to Deb from Smitten Kitchen. I found her recipes for Crisp Salted Oatmeal Chocolate cookies, and I wanted to make them. She had me hooked at salted. Salt. My weakness. One of many.</p>
<p>The original cookies had white chocolate chunks in them, and I&#8217;m not a big fan of white chocolate (as it&#8217;s not chocolate at all, just cocoa butter) but she adamantly said that white chocolate was the way to go with these. I thought I bought white chocolate. I really did. The wrapper of the chocolate bar I bought was white while the dark chocolate bar of the same brand was dark! But it was semi-sweet chocolate. So, instead of getting white chocolate, I just used what I had. And I&#8217;m happy I did. I mean, I&#8217;d still like to try them with white chocolate,  but this batch was not disappointing at all! They are thin, but not too thin. There&#8217;s a bit of chewiness but a good amount of crunch around the edges. I think she described them as &#8216;shattery&#8217; which is definitely a good descriptor. A worthy cookie.</p>

<p>I think the thing I liked most about these cookies is that the insides were soft and full of the chocolate pieces while the outsides were a light, crunchy and melted in your mouth. I will never waste an egg white again. . . these will be made again and again!</p>

<p>I actually forgot to add the cream of tartar, intentionally left out the nuts and the cookies came out great. Not bad for a cookie with only five ingredients! 			<content:encoded><![CDATA[<p>Forgive me all you dieters out there, but the cookie madness is continuing. Jason begged me to make a normal cookie. And to him, there is only one cookie: the chocolate chip cookie. Now there are a bazillion recipes out there for the perfect chocolate chip cookie and I don&#8217;t know that I claim that this one is IT, but it&#8217;s close. It packs in a ton of chocolate chips and subtly sneaks in the nuts in such a way that even those that think they don&#8217;t like nuts in their cookies will not know the difference.</p>

<p>I threw the pecans that are called for in the recipe into the food processor and processed them until they were almost pecan flour. . . I found out long ago that leaving out the nuts in a recipe that calls for them makes a strange cookie. Apparently you have to do something to make up for the subtraction and I&#8217;m not an experienced enough baker to know what that substitution is. <img src='http://thinkliz.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  Therefore, I leave the nuts in, just pummeled until you just get the taste of the nuts and not much of the texture! Oh and I&#8217;m falling in love with my <a href="http://www.amazon.com/Silpat-2-Inch-Nonstick-Silicone-Baking/dp/B00008T960/ref=sr_1_1?ie=UTF8&amp;s=home-garden&amp;qid=1248995420&amp;sr=8-1" target="_blank">silpat</a> all over again. One of my favorite kitchen items, for sure. If you don&#8217;t have one, you should get one soon. NOTHING sticks to a silpat which is good because my baking pans suck. A lot.</p>

<p>And much to Jason&#8217;s pleasure, the cookies turned out fantastic. Crispy on the edges and soft in the middle, packed full with chocolate chips. And I just used boring old tollhouse semi-sweet chocolate chips. Next time I&#8217;m making these with some delicious bittersweet higher quality chocolate chips. . . drool.</p>

It started with the <a href="http://elizabethcarroll.wordpress.com/2009/07/17/world-peace-cookies/">World Peace cookies</a> and I haven&#8217;t been able to shake the urge to make cookies. Thankfully I have coworkers that I can bring my baking excess to. I&#8217;m thinking they&#8217;re going to extend my maternity leave a little longer if I keep bringing them these baked goodies. <img src='http://thinkliz.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>I decided I needed to venture away from chocolate based treats just to make sure that I wasn&#8217;t missing out on something delicious that wasn&#8217;t chocolate (blasphemy, right?). Well, I do have a soft spot for shortbread style cookies. Dipped in chocolate though. <img src='http://thinkliz.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  Enter, pecan sandies. . . essentially a <a href="http://elizabethcarroll.wordpress.com/2009/05/14/mexican-wedding-cookies/">mexican wedding cookie</a> without the powdered sugar on the outside. Sadly, I over-roasted the pecans and these cookies tasted vaguely of burnt popcorn. The texture was perfect and the taste would have been had I not been preoccupied with baby while the pecans were roasting. I love the size and the shape of these &#8211; perfect for grabbing a small handful of to munch on. Even though I messed up the pecans, I still feel that recipe is worth passing on:</p>

<p>After the pecan sandies, I thought it might be nice to gift some biscotti to a friend of mine, so I did a bit of research and came up with this recipe. <a href="http://elizabethcarroll.wordpress.com/2009/02/19/chocolate-hazelnut-biscotti/">Biscotti</a> seems so fancy, but it&#8217;s really so easy! I kept these guys a bit smaller than my last biscotti that I made and I thought they turned out great. Perfect for dunking in a cup of coffee or tea. Loved the almond flavoring.</p>

<p>They are essentially chocolate wafer cookies that have bittersweet chocolate chips in them. They have this delicious sandy texture, and my favorite part? The fleur de sel salt. I love salt and sweet together.</p>

<p>They are pretty easy to make, albeit a bit messy. When combining the creamed butter with the cocoa mixture, make sure you do it slowly, or you&#8217;ll end up with cocoa powder all over everything. The dough mixture is very crumbly but it solidifies once you refrigerate it. Watch out on the dough though because there are no eggs, therefore it is safe to eat. And once you start eating the dough, you may not want to bake the cookies! <img src='http://thinkliz.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>My recommendation when slicing the cookies, let the dough sit out at room temperature for about 20 minutes and make sure that your chocolate chips are small, otherwise it will pull the dough when slicing and crumble. If the pieces do crumble, just <del datetime="2009-07-17T03:25:22+00:00">eat them</del> reshape into a circle and it will bake together just fine. Be very careful not to overbake these cookies. They may not look done when you pull them out of the oven but let them sit a couple minutes before putting them on the cooling rack and they&#8217;ll be perfect.</p>

<p>So yes, I think this recipe is up there with the <a href="http://elizabethcarroll.wordpress.com/2009/05/29/car-bomb-cupcakes-chocolate-whiskey-and-beer-cupcakes/">Car Bomb Cupcakes</a>, but much less time intensive and a bit more elegant (I mean, come on, it has fleur de sel salt in it!). You may even already have all the ingredients in your pantry, and if you do, you should grab a glass of milk and certainly make these today!</p>

			<content:encoded><![CDATA[<p>So I <em>have </em>been cooking and baking although not near as much as I have previously. It seems I&#8217;m tired a lot. Gee, I wonder why. <img src='http://thinkliz.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  Well, I did do a tiny bit of holiday baking last week with <a href="http://kaylebug.wordpress.com/2008/12/20/cookie-making-time/" target="blank">my D-Group girls</a> and I was pretty happy the way everything turned out! I tried a new cookie recipe this year, just for fun and they were pretty good. Not perfect, but good. We did some traditional cookies, with the cookie cutters in Christmas shapes and frosting, but me, I don&#8217;t like to frosting things. I like easy. And I mean REALLY easy. So, I tried something I&#8217;d wanted to try for awhile, sandwich cookies with jam in the middle that could peak out a hole in the top. I think they turned out really nicely. A little dusting of powdered sugar and we&#8217;d be set for a fancy gathering. (And they tasted good too. <img src='http://thinkliz.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  )</p>

			<content:encoded><![CDATA[<p>Oh my goodness. I can&#8217;t believe it has been years and years since I last baked shortbread. Shortbread is one of my favorite types of cookies. You can dip it in chocolate, roll it in sugar, make it in any shape you want, mix in nuts. . . the possibilities are endless. It is so easy and I typically have all of the ingredients on hand (butter, flour, sugar, salt, that&#8217;s it). I saw this recipe on Saturday and INSTANTLY started to work on it. Leaving it to sit out for 2 hour or more was a new method for me, as was the twice baked method. But DANG, these cookies are awesome. I think the second baking, not only crisps up the cookies but it also browns the butter to bring out an added nuttiness.  I brought a couple with me to work so that I could eat them with some tea for a mid afternoon snack. How European is that? Problem is, I want to eat them NOW!</p>

I really want to spend some time sketching so that the doodles are my own &#8211; so maybe that will be the direction I go in. At least I know I want to use my own handwriting in the title now. <p>And yes, I went running last night. I didn&#8217;t drink beer. My legs are a familiar sort of sore (that makes it hard to get out of bed on an oddly chilly for Texas morning. What&#8217;s going on with the weather? I like it! Fall? In Texas? What?!).</p>
<p>And I also got a ridiculous amount of things done last night. One of them was to try out this recipe that I saw on 101cookbooks a little while ago. I was intrigued by the list of ingredients, most of which I had at home already. &#8216;Healthy&#8217; cookies that tasted good? Don&#8217;t know about that. But the combo of oats and chocolate was what sold me (as I love a good oatmeal chocolate chip cookies, which is hard to find). And yes, these healthy cookies, with no butter, sugar, shortening, or eggs, were delicious. (EC Note: I did use sweetened coconut flakes because that&#8217;s what I had on hand, the recipe calls for unsweetened.) I had to take them away from Jason or we would have eaten all of them! I&#8217;m not sure how the kiddo population would take to them as they seem to have a more &#8216;grown up&#8217; sort of texture and taste, but one could always try and see!</p>
